Our mushroom jerky is a prime example of our regenerative philosophy in action: we make our delicious jerky from pieces of mushrooms, particularly oyster mushrooms, that are left over or are too small to be sold to our restaurant customers.

We worked hard on our recipe, launched it at the farmer’s market, and then spent six months tweaking it to create what our customers say is the best mushroom jerky they’ve ever tasted!
